Nut Butter Cookies

I had a jar of peanut butter in the back of my pantry for a long time, and decided to use it, though I generally avoid peanuts. My spouse raved about them, so worth the lectins for a rare treat.

1 cup Organic Peanut Butter or almond butter, Crunchy
1 large egg
10 drops liquid stevia
2 level tablespoon Psyllium Husk Powder

Soften the nut butter, add egg, stevia, and psyllium powder. Use a cookie scoop, or drop by the teaspoon, onto parchment paper lined cookie sheet to make about 14 cookies. Press down with a fork. Bake at 350F for 10 minutes–watch to not over cook. Move to a rack, and allow to cool completely.

Cocoa No-Bake Haystacks

Hoilidays loom, so I am thinking of foods to have or take during this feasting season. I grew up with coconut and chocolate candies called haystacks, and with a no-bake cookie recipe which was made with old fashioned oatmeal, both of which gave me the idea for a HFLC version that is a kind of hybrid. This would be good for a holiday treat.

Cocoa Coconut PB No bake Haystack Cookies**
Ingredients:
1 cup Swerve (erythritol)* (I plan to try a batch with nothing or just stevia)
4 tablespoons cocoa
1 stick butter
1/2 cup almond or coconut milk
1 cup peanut or almond butter (chunky is best)
1 tablespoon vanilla
3 cups coconut, shredded (lightly toasted if desired)
Stevia drops, to add sweetness to taste.
Waxed paper
Directions
In a heavy saucepan bring to a boil, the Swerve, cocoa, butter and milk. Let boil for 1-2 minutes then add stevia, peanut/almond butter, vanilla, and coconut.
On a sheet of waxed paper, or silipat, drop mixture by the teaspoonfuls; leave until cooled then refrigerate to hardened.
*Note on erythritol: this particular sugar alcohol is not reputed to impact blood sugar or insulin, but it is a sweet taste, so if you cannot have one and walk away best not to touch. I have not tried this recipe with stevia alone, but I will report when I do. So far I have been able to just eat one, which for me is a minor miracle. With real sugar I never could.
