Butterscotch Pecan Squares (fat bombs)

on November 22, 2013

IMG_1020Butterscotch Pecan Squares (fat bombs)

I had a hankering for butterscotch, and happened to have some butterscotch extract in the pantry, so decided to create another of my favorite fat bombs. A quick and easy way to get plenty of fat and some protein in a small package. Great for on-the-go food. I really liked the butterscotch flavor in these. If you are not sure, you might add half the amount, taste, then decide if you want to use the full amount.

INGREDIENTS

1 cup Raw Organic Coconut Butter (I use Artisana)

4 tbsp Butter Salted

1 tsp butterscotch extract (Olive Nation brand is my favorite for most extracts)

1/3 cup Unsalted Dry Roasted Pecan Pieces

5 drops Stevia (Now)

Soften the butters and blend well, then add remaining ingredients. Pour into mold or square container and refrigerate. I got 8 pieces with my mold. You can easily make larger batches, but I don’t like to have too much of any one treat food.
