Butter Balls

I like to have quick hflc food on hand for breakfast or carrying in a lunch bag when out for the day. I’ve made many different fat “bombs/balls” and this is another variation. I actually rarely make the same batch twice. It is fun to try new combinations. Maple walnut is one of my all time favorites, using maple flavoring. The key for any of these is this basic recipe to which you can add nuts, seeds, small amounts of fruit like fresh/frozen blueberries, lingonberries,BACON BITS!, chopped cranberries, coconut, chocolate/cocoa, lemon or lime juice, pumpkin, etc. In other words, any flavor you really enjoy can be incorporated into these HFLC fat bites.

Recipe for  18-24 depending on how you make them.

Basic ingredients:

1/2 pound good butter (Kerrygold is my favorite)

1/2 cup coconut oil or coconut butter

1/4 tsp sea salt.

Additions: 1/4-1/2 cup of berries, nuts, seeds, nut butter, etc.;  1/2-1 teaspoon of flavorings. You start low and test before adding more.

Note: if the mixture is stiff, add more coconut oil. If too runny, add more nuts or some flax meal or dried coconut

Mix in food processor, or place in a bowl over hot water to soften and whisk together well.

Pour into silicone mold, or container to 1/2-1 inch depth. Chill, then cut. Keep in refrigerator.
