Mozzarella, Tomato, Basil Salad

You may know this as caprese salad. I like it because the flavors are incredible especially if the tomato is perfectly ripe. Hint: if you rely on market tomatoes that are rarely truly ripe, put the tomato in a bag with an apple and ripen for a day or two.

Slice the fresh mozzarella into one inch slices, place on a tomato slice

Top with a few fresh basil leaves.

Drizzle on a good balsamic vinegarette, or plain olive oil

For a pretty  plate place atop a  piece of red leaf lettuce.
