Rich Tasting Cauliflower Mash

Steam a head of cauliflower until just tender. Boiling adds too much water.  Mash by hand or pulse in a food processor. Add 2-3 tablespoons of butter, and 3-4 Tbs of cream, salt and pepper. Here’s the magic: at the end to finish, lightly beat a room temperature egg, then beat or stir the egg into the mash. My mom did this with mashed potatoes which made them far tastier; does same with cauliflower mash. Also gives it a richer color.
