Faux Hashbrowns

I love crispy in foods, and used to really enjoy old fashioned shredded hash brown potatoes because of their incredible crispiness.  This recipe gets pretty close.

Grate or finely chop one head of cauliflower; steam lightly, then squeeze out all the excess moisture in a clean tea towel.

2 eggs beaten well

1/2 cup cheddar cheese (or any firm cheese)

salt and pepper to taste

dash of cayenne pepper

Dash of garlic powder

Mix the eggs, cheese, and seasoning then add cauliflower; in a frying pan heat enough fat (I prefer bacon dripping) to cover the bottom well, about 3-4 Tbs.

Form into patties and fry in the hot fat until nicely browned and crispy.
