Chorizo Cauliflower Saute

Yum! This was so good. I like a bit of spiciness in food, and this was just right to me. You could use a milder sausage like pepperoni, or plain Polish sausage for non-spicy. For more bite, try andouille.

chorizo-4 oz (@2 medium links)

med head of cauliflower

Slice links in half, then again, cut into bite-sized pieces, toss in a pan set on medium heat. Core the cauliflowe and roughly chop. To speed up the process I steamed the cauliflower four minutes in the microwave. Toss the cauliflower into the sausage and stir to coat; cook about 5 minutes or until the cauliflower is just tender.

Later I tossed in some cooked shrimp and that was great , too.
