Pineapple Coconut Balls

Another tasty variation on the HFLC balls.

1/2 cup crushed or small wedge pineapple, drained

1 cup of coconut butter (or mix coconut oil and raw coconut to same amount)

1/4 cup butter

optional- a few drops stevia

Warm the coconut butter in a bowl of hot water if it is solid, then blend with softened butter and pineapple. Pour into molds, or a small glass container, and refrigerate. Once set, cut into squares, or roll into balls and then roll in raw coconut. Store in the fridge.
