Ch-Ch-Ch-Chia Pudding

Chia seeds have lots of good omega 3s and other beneficial nutritional elements. They also make a great thickener for meat loaf, faux bread recipes, and a delicious tapioca-like pudding. I was no fan of tapioca as a kid, but this is much better. I made a maple walnut version, but you can add about any sort of extract to flavor, or chocolate, etc. I liked the light and delicate flavor of this recipe.

Maple Walnut Chia Pudding

  4 tbsp Chia Seed

  2 cups Almond Milk – Unsweetened

  1 tsp Maple Extract

  5-10 drops Stevia (Now brand)

  2 tbsp Walnut Pieces
Mix chia seeds in almond milk, flavor with maple and sweeten, and refrigerate overnight to allow maximum thickening; to serve top 1/2 Tbs of crushed walnuts (whipped cream would be great, too).
