Nutty Yummies aka Fat Bombs aka Faddy Balls

This is my all around recipe for the tasty little fat ball snacks which my grand-kids call Nutty Yummies, but the name doesn’t matter, nor the shape. These are high in calories as well as yummy fats, so if you are trying to lose weight limit to 1-2 a day. I like these for a quick meal replacement.

I like to use equal amounts of coconut butter, any nut butter, KerryGold butter–all at room temperature, along with roughly equal amounts–about a third to half a cup each–of raw sunflower seeds, pumpkins seeds, walnuts, chia, or shredded raw coconut, or whatever is on hand. A few drops of vanilla, coconut flavoring, stevia, etc.,  is acceptable, but not needed. Spin the lot in the food processor until smooth-ish. Pour into a pan and cool then cut into squares, or pipe into molds or candy cups-papers, or chill a couple hours then roll into balls about one inch, roll again in coconut, crushed pecans, or cocoa. I prefer the ball shape since they look so appealing.

Blueberry Version: 1 cup frozen blueberries to 1/2 cup butter: blend then chill then roll in almond meal or shredded coconut.

Maple Walnut Version: Butter, walnuts, a couple drops of maple flavoring or 2T  maple syrup. Roll the balls in crushed walnuts.

Keep chilled in warm weather.
