Trout is Tremendously Tasty

We were on vacation in Colorado where I enjoyed many lovely meals, two of which were of trout which is my favorite fish. Trout is so easy to cook, and so mild in flavor that nearly everyone can enjoy it. Avoid farmed trout if possible.

My preferred recipe is a  simple broiled trout.

Trout filets

butter & salt

sliced almonds

Brush the trout filets with melted butter, salt lightly, and pop under the broiler for 3-5 minutes or until the flesh turns opaque. Watch closely!  Slide out from the broiler and top with some sliced almonds, put back under the broiler until the almonds lightly brown.

Serve along with some sauteed greens, cauliflower or sweet potato mash, or a salad.

Another recipe which is surprisingly good, is an Italian version: broil as above, then top with a little of  your favorite marinara sauce to which add a few sliced green olives, some basil, and a sprinkle of parmesan cheese. I had this at a restaurant in Portland,OR, and was surprised by how tasty it was.

Remember the old belief that fish is brain food and eat lots of fish.
