Cranberry Sauce

I am opposed to over use of artificial or natural sweeteners, but some modest use of them is fine especially for a holiday favorite like cranberry sauce. My recipe couldn’t be simpler.

12-16 oz  cranberries (if possible ripen them a bit more by placing them in a brown paper bag with a ripe apple for a couple days).

1 cup water

1 tsp orange zest

Stevia drops

Boil the cranberries in water for 2 minutes then reduce heat and simmer for 10 minutes, add orange zest and allow to cool to room temperature. Add enough stevia drops to make cranberries palatable, but not overly sweet. The tartness of cranberries compliments turkey and other typical holiday foods.
