Autumn Apple Cake

My spouse has always loved apple cake for his fall birthday, so with a bit of experimenting I came up with this recipe for a version that does use xylitol, though stevia will work just as well. Since my beloved prefers the xylitol, and, as he rarely eats sweets, and this one seems to taste better to him, that’s what he got.

Serves 8 (I make half this batch so I don’t have extra dessert food around)

4 large eggs

1 tsp vanilla

3/4 cup Swerve/xylitol (or equivalent stevia, or palm or coconut sugar)

2/4 cup coconut milk

1/2 cup almond meal/flour

1/2 cup sifted coconut flour

1/4 tsp sea salt

1/2 tsp baking soda

1 medium granny smith or tart apple, peeled , cored, and thinly sliced

2 Tbs cinnamon + 2Tbs xylitol

Pre-cook the sliced apple with half the cinnamon and xylitol/stevia in the microwave for 2 minutes, or to just slightly tender.

Mix all the wet ingredients, then add the dry and mix well, pour about a third of the mixture into a buttered 8×8 baking dish; layer with the apples (don’t use any liquid that cooked off), sprinkle with remaining cinnamon and xylitol, then top with remaining batter. A very light sprinkle of cinnamon makes the top pretty.

Bake at 350F for 30 minutes, or until a knife comes out clean.

Serve with a hefty dollop of whipped cream.
