Dover Sole Piccata or Chicken Piccata

I love Dover sole, but it is hard to find fresh in my area markets,  especially at an affordable price, so I was thrilled when I found a large package of frozen Dover sole at Trader Joe’s or Whole Foods (can’t remember which). Any flounder, sole,  white fish works well with this simple recipe, as does chicken/turkey breast. I know fresh is better, but some is also better than none.

Quickly saute the sole (or chicken breast pounded thin) in butter, remove; then in the same pan cook up the lemon sauce that makes this dish piccata.

Serves 2

3 tablespoons butter
1 clove garlic, minced
1 -2 tablespoon fresh lemon juice
2 -3 tablespoons capers, with juice                                                                                                      1 T fresh parsley

Melt the butter at medium high, add garlic, lemon juice, salt and pepper and reduce until thickened a bit; add parsley and capers and pour the sauce over the fish/chicken.
