Chocolate Coconut Mousse or Ice Cream

This mousse is incredible, at least if you, like me, love coconut and chocolate. Very simple too, which is always nice.

1 can of full fat coconut milk, well refrigerated

20g Lindt 99% dark chocolate (or 2T regular or dark chocolate cocoa powder)

10-15 drops of liquid stevia

1/2tsp of vanilla (coconut, almond, or chocolate extracts are all good)

Melt the chocolate with a about 1/4c  water and let cool down.

Open the can of coconut milk and scoop out the solids which will be on top, avoiding the watery part at the bottom (save that for your protein shake), which will yield about one cup.

Whip the coconut milk solids with a mixer until light and fluffy; then add the melted chocolate,  stevia, extracts.

Makes three generous servings, or four small ones.

For ice cream,  put in the freezer for about 2 hours.
