Sweet Potato Fluff

Bake, microwave, or boil one medium sized sweet potato. Peel, mash, then stir in 2 oz of cream cheese, and 2 tbs butter. Thoroughly whip to create a fluffy smooth texture.  You can do this in a food processor, but I prefer the texture not be too smooth or glue-like.
