Cod with Cream Sauce

Cod is a mild, firm white fish, and one of my favorite meals. Plus, it’s so easy to adapt to a wide variety of flavors.  Even people who profess to dislike fish like this dish.

10 oz cod

8 oz sliced mushrooms

1 c heavy cream

1/4 average red bell pepper sliced

2 T butter or sour cream

salt and pepper

Serves 2

Put in a glass casserole, top with cream, mushrooms, a few red pepper slices (or, onions, garlic, anything with high flavor), salt-pepper to taste, cover and bake at 375F  for 20-30 minutes, or fish become opaque.

Remove the fish and veggies, then put the dish on the stove top, raise the heat, drop in 1-2 Tbs of butter or sour cream and reduce for a minute. Pour sauce over the cod and serve.  A light sprinkle of parsley to give it class.

Options: 1/2 oz sherry added when reducing the cream and juices.

You can do this dish stove top or in the microwave just as well.
