Sour Cream 1-Egg Soft Omelet

I like to play around with what’s at hand, so what I do one day is always up for adaption. No fat-free ingredients, please.

1 large egg

1/4c sour cream

1T grated parmesan 

1T bacon grease

Blend first two ingredients well, pour into a hot omelet type/size pan with the melted bacon grease, swirl to coat bottom of the pan, turn down the heat to medium-high. When omelet sets up a bit top with:

1/4c sharp cheddar shredded

Lift the edge to see if browned a bit, then slide out onto a plate -nutrition for omelet only below. Served with half an avocado, and one small slice paleo bread,  this one is good:(http://www.lowcarbshighfat.com/2012/03/lchf-bread)

This is rather soft and may fall apart, as mine did, mainly because I used the wrong pan (the right tool is important!). But it tasted yummy.

Ideas: I may try using this like a blintz, adding sour cream, and a tiny bit of blueberry puree. Or a sprinkle of cinnamon & 3-4 thin slices of sauteed apple.
