Goat Cheese & Bacon Rounds

I had a small round of goat cheese in my deli drawer for quite a while, and having determined it wasn’t spoiled wanted to use it up pronto.  I saw a similar version of the following at another site I can’t now remember, but safe to say it has been done in various recipes and is easy to adapt to what’s on hand.

6 – 1/2″ rounds of chevre/goat cheese (about 3 ounces)

4-5T bacon bits

Put the bacon bits in a small bowl and press each round into the bacon bits and turn over and cover well both sides. Place in a refrigerator container, that is if you don’t eat them all for your lunch. Very tasty, but what isn’t with bacon covering it?

I welcome suggestions for variations on this recipe.
